Why not? Everyone wants to do something festive on New Year's Eve -- what's more festive than watching two people get married and then toasting them all night? Eight o'clock is a perfectly appropriate time to begin. You might even want to start with cocktails and dinner, and then say your vows at the stroke of midnight. Can you imagine celebrating your anniversary every year on January 1 at 12 a.m.? It's a fabulous idea.
