1. Veggie-Heavy Skewers
Shish kebabs are a treat. To make them even healthier, just cut back on the meat. Skewer even more vegetables like cherry tomatoes, carrot slices, mushrooms, eggplant, onions, squash and sweet potatoes.
2. Souped-Up Salsa
Chop up fresh tomatoes and cilantro, and add them to a bottle of store-bought salsa. Use this fresh-tasting treat as a dip for chips or pita bread, or pile it on as a dressing for salads, tacos and burritos.
3. Mandarin Magic
Make a spinach salad to your liking and then add a can of mandarin oranges as the final touch. You’ll love how the fresh citrus brings out all the other flavors of the salad.
4. Sweet Roasted Strips
Try a twist on traditional French fries -- cut sweet potatoes into half-inch strips and roast them until they’re crispy. You’ll have a vitamin-A-filled snack and you’ll be on top of a restaurant industry trend.
5. Oven-Roasted Stew
Toss a bag of frozen stew vegetables (large hunks of carrots, potatoes, celery and onion) with a tablespoon of olive oil, a dash of salt and pepper and a few sprigs of fresh rosemary; then roast at 425 degrees for 30 minutes. Yum!
